Hi everyone,
All of my friends are either vegetarian or full-on meat lovers, so I'm having them over for dinner Wednesday night to convince them that Vegan food is NOT in fact gross! Would you guys be willing to share some of your most favorite, knock-people's-socks-off vegan recipes? I just really, really don't want to scare them away...nor do I want them to eat it and say "this is okay, but real 'x' is better". I was thinking about doing a pasta dish with tomotoes, basil and Teese Mozzarella, and baking some chocolate chip cookies. Any ideas would be helpful. Thanks! ~Lauren |

WELL You guys are no fun! ;)
The dinner has already happened, but I wanted to share a recipe with you that was a huge hit with everybody. Nobody has eaten this and not raved about it! Minestrone soup (thanks Mama!) 1 11 oz. can black beans 1 tsp salt 1/2 tsp garlic salt 1 pressed garlic clove 1 T olive oil 1/4 tsp pepper 1/4 cup chopped parsley 1 small zucchini, unpeeled, cut in small cubes 2 stalks celery chopped 1 small diced carrot 2 green onions, chopped 3 T. Margarine 1 8 oz can tomato sauce 1 can whole tomatoes 1/4 cup orzo 2 1/2 c water Place undrained beans in a large kettle. Mash half of the beans, leave the rest whole. Add salt, garlic salt, garlic, pepper, oil and parsley, stirring well. Then add veggies, margarine, tomato sauce, tomatoes and water. Simmer one hour or more. Prior to serving, add orzo and simmer for 10-15 minutes. |

I really enjoy this recipe from the book by Katzen of the same name.
http://www.bigoven.co... I also enjoy making my Vegan meatloaf during the Holiday season while the rest of my family is eating non-Veg. I use flavored tofu, the soy morning sausage, and those crispy patties (comes in a 2 pack) I don't have the exact names of these things but the live next to each other at Trader Joes. Also I will add an onion, maybe green pepper and some garlic. You could add your own mix of Vegetables / spices. After you breakdown the soy products and dice up the vegetables mix them in large bowl to form a big glob. Then put that glob in a bread pad. Cover with foil and bake for about 60 minutes on 350F - 400F depending on how crispy you want the outside. You can also mix in a mild sauce, but the ingredients are usually spicy enough for me. In the end it looks just like meatloaf, but tastes great and of course its all vegan. I hope you had a good party. |
